Awadhi (Lucknowi) Chicken Biryani Recipe

1. 500 grams chicken, preferably bone-in pieces

2. 1 cup thick yogurt

3. 1 tablespoon ginger-garlic paste

4. 1 teaspoon red chili powder

5. 1/2 teaspoon turmeric powder

6. 1 teaspoon garam masala

7. Salt to taste


Now that you have the ingredients to marinate the chicken it’s time to pay attention to our rice. To prepare rice you’ll need to soak basmati rice for 30 minutes and drain them. Whole spices such as 2-3 green cardamom pods, 2-3 cloves, 1-inch cinnamon stick, a bay leaf and salt to taste. 


Ingredients to prepare Biryani

1. 2 large onions, thinly sliced

2. 2-3 green chilies, slit

3. 1/2 cup fresh mint leaves

4. 1/2 cup fresh coriander leaves

5. 2 tablespoons ghee (clarified butter)

6. 2 tablespoons oil

7. A pinch of saffron threads soaked in 2 tablespoons of warm milk

8. A few drops of kewra water (optional)

9. Rosewater (optional)

10. 2-3 green cardamom, 2-3 cloves, 1 cinnamon stick and a bay leaf

Step 1: Marinating the Chicken

Step 3: Assembling the Biryani

Take a heavy-bottomed pot or deigh, pour some ghee in it. Add the thinly sliced onions and sauté until they turn golden brown and crispy. Remove half of these fried onions for garnish. In the same pot, layer the marinated chicken at the bottom. Now, top the chicken with green chilies, fresh mint leaves, and fresh coriander leaves. Layer the partially cooked rice over the chicken and spices. Sprinkle saffron milk over the rice for a rich golden color. Drizzle a few drops of kewra water and rosewater if desired. This is totally optional if you want to skip you can definitely do that. Now, cover the pot with a lid and steal it with wheat flour dough to trap the steam. Cook it on low heat for about 25-30 minutes, until fully cooking and allowing the flavors to meld.
