Get your Vegan Biryani Recipe - Charcoal Eats
Vegan biryani, like many vegan and vegetarian dishes, came into existence as a way for people who follow a plant-based diet to enjoy traditional meat-based dishes without compromising their values or dietary restrictions. As the popularity of veganism and vegetarianism has grown, many people have begun looking for creative ways to adapt classic dishes to fit their dietary needs.
Vegan biryani likely became a trend in Western countries where Indian cuisine is popular, and a plant-based diet is catching up. Many Indian-inspired restaurants and food trucks in the west started serving vegan options, which include vegan biryani.
The recipe and the ingredients used in the vegan biryani are quite similar to the traditional one, with the only difference being that meat is replaced with plant-based protein like chickpeas, lentils, tofu, and other vegetables to make it rich and flavorful. Furthermore, instead of using Ghee or other animal-based fats, it can be made by using plant-based oils, making it a suitable option for vegans.
In recent years, with growing awareness and interest in plant-based diets, vegan biryani has gained popularity with vegans and vegetarians, and meat-eaters looking for a healthier and more sustainable option.

2 cups basmati rice
3 cups water
1 onion, finely diced
2 cloves of garlic, minced
1-inch ginger, minced
1 cup mixed vegetables (such as carrots, bell peppers, peas, and cauliflower)
1 cup chickpeas or lentils, cooked
1 cup tomato puree
2 teaspoons biryani spice blend (such as cumin, coriander, turmeric, and cinnamon)
1 teaspoon garam masala
Salt, to taste
2 tablespoons vegetable oil
Rinse the rice well in cold water and then soak it in water for 30 minutes.
In a large pot, bring the water to a boil and add the rice, stirring gently. Reduce the heat to low, cover the pot, and cook the rice for 18 minutes.
Meanwhile, heat the oil or ghee in a pan over medium heat. Add the onion, garlic, and ginger, and cook until the onion is golden brown.
Add the mixed vegetables and cook for a few minutes until they soften.
Add the chickpeas or lentils, tomato puree, biryani spice blend, garam masala, and salt, and stir well. Cook for another few minutes until the mixture is heated through.
Once the rice is cooked, strain it and add it to the vegetable and chickpea mixture, stirring gently. Cook on low heat for another 2-3 minutes.
Serve the vegan biryani hot, garnished with fresh coriander or mint.
