Ingredients:
2 cups basmati rice
3 cups water
1 onion, finely diced
2 cloves of garlic, minced
1-inch ginger, minced
1 cup mixed vegetables (such as carrots, bell peppers, peas, and cauliflower)
1 cup chickpeas or lentils, cooked
1 cup tomato puree
2 teaspoons biryani spice blend (such as cumin, coriander, turmeric, and cinnamon)
1 teaspoon garam masala
Salt, to taste
2 tablespoons vegetable oil
Instructions:
Rinse the rice well in cold water and then soak it in water for 30 minutes.
In a large pot, bring the water to a boil and add the rice, stirring gently. Reduce the heat to low, cover the pot, and cook the rice for 18 minutes.
Meanwhile, heat the oil or ghee in a pan over medium heat. Add the onion, garlic, and ginger, and cook until the onion is golden brown.
Add the mixed vegetables and cook for a few minutes until they soften.
